Dark Chocolate and Orange Fudge


  • 2 cups raw cashews (preferably soaked and dehydrated first) 
  • 1/4 cup coconut butter (or coconut manna or coconut cream concentrate) 
  • 1/2 cup coconut oil
  • 1/3 cup honey (or use maple syrup for vegan)
  • 1 tsp organic pure vanilla extract
  • The zest from 1 navel orange (1 packed TBSP)
  • The juice from 1 navel orange (1/4 cup)
  • 1/3 cup organic cacao powder or cocoa powder
  • A pinch of sea salt 


  1. In your food processor combine the cashews and coconut butter and process until smooth
  2. Place a medium saucepan/pot on low heat on the stove
  3. Add the coconut oil, honey and vanilla extract to pot and let melt
  4. Once melted, add the orange zest and orange juice as well as ingredients from your food processor
  5. Stir well to combine the ingredients
  6. Add the cacao powder and sea salt and stir well until combined. Remove the saucepan from the heat
  7. Line an 8×8 pan with parchment paper (or use a silicone pan if you have one) and pour the ingredients into the pan
  8. Spread well and press down with a spoon or knife to form an even layer
  9. Place the pan in the freezer for about 60 minutes
  10. Cut fudge into pieces of desired size and enjoy! 

NOTE: Store the fudge in the fridge or freezer
