Dark Chocolate and Orange Fudge
Ingredients
- 2 cups raw cashews (preferably soaked and dehydrated first)
- 1/4 cup coconut butter (or coconut manna or coconut cream concentrate)
- 1/2 cup coconut oil
- 1/3 cup honey (or use maple syrup for vegan)
- 1 tsp organic pure vanilla extract
- The zest from 1 navel orange (1 packed TBSP)
- The juice from 1 navel orange (1/4 cup)
- 1/3 cup organic cacao powder or cocoa powder
- A pinch of sea salt
Directions
- In your food processor combine the cashews and coconut butter and process until smooth
- Place a medium saucepan/pot on low heat on the stove
- Add the coconut oil, honey and vanilla extract to pot and let melt
- Once melted, add the orange zest and orange juice as well as ingredients from your food processor
- Stir well to combine the ingredients
- Add the cacao powder and sea salt and stir well until combined. Remove the saucepan from the heat
- Line an 8×8 pan with parchment paper (or use a silicone pan if you have one) and pour the ingredients into the pan
- Spread well and press down with a spoon or knife to form an even layer
- Place the pan in the freezer for about 60 minutes
- Cut fudge into pieces of desired size and enjoy!
NOTE: Store the fudge in the fridge or freezer
