Raisin Spice Bars

Ingredients

  • 1 cup seedless raisins
  • 1 cup water
  • 1/2 cup salad oil
  • 1 cup sugar
  • 1 egg, slightly beaten
  • 1 3/4 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 chopped walnuts
  • Powdered sugar

Directions

  • Combine raisins and water in a medium saucepan and bring to a boil; remove from heat. 
  • Stir in oil and cool to lukewarm (you can speed this up by chilling in the refrigerator or placing the pan in a large bowl of ice water.
  • Stir in sugar and egg.
  • In a large bowl stir together the flour, salt, baking soda, cinnamon, nutmeg, allspice, cloves and walnuts. 
  • Add raisin mixture and stir just enough to incorporate ingredients well.
  • Pour into a 13 x 9 x 2-inch baking pan. Bake at 375 degrees for 20 minutes or until done. 
  • When cool, cut into 24 bars or squares. 
  • Before serving, dust top lightly with powdered sugar.
