Raisin Spice Bars
Ingredients
- 1 cup seedless raisins
- 1 cup water
- 1/2 cup salad oil
- 1 cup sugar
- 1 egg, slightly beaten
- 1 3/4 cups flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1/2 teaspoon cloves
- 1/2 chopped walnuts
- Powdered sugar
Directions
- Combine raisins and water in a medium saucepan and bring to a boil; remove from heat.
- Stir in oil and cool to lukewarm (you can speed this up by chilling in the refrigerator or placing the pan in a large bowl of ice water.
- Stir in sugar and egg.
- In a large bowl stir together the flour, salt, baking soda, cinnamon, nutmeg, allspice, cloves and walnuts.
- Add raisin mixture and stir just enough to incorporate ingredients well.
- Pour into a 13 x 9 x 2-inch baking pan. Bake at 375 degrees for 20 minutes or until done.
- When cool, cut into 24 bars or squares.
- Before serving, dust top lightly with powdered sugar.
